Lamb Chops with Rosemary and Mint
We love lamb! It great to try new things and if any of you have a garden mint is a very easy herb to grow (and if you don't have a garden mint is great for an indoor planter too). So mix your fresh mint with some very fresh wholesome lamb and give this recipe a try on the grill this summer.
Grilled Lamb Chops with Rosemary & Mint
1 handful of both fresh rosemary and mint
4 garlic cloves
Salt and pepper to taste
1/4 Cup Extra Virgin Olive Oil
Lemon wedges for serving
8 Lamb Chops
Strip the leaves off of both rosemary and mint. Finely chop the rosemary leaves, mint leaves, and garlic together by hand and then season to taste with the salt and pepper. Stir in the olive oil and blend. In a dish coat or brush the chops and let them sit at room temperature for at least 30 minutes or up to 2 hours. Preheat a grill or grill pan. Season the lamb chops again with salt and pepper to taste. Grill over high heat, turning once, until nicely charred on the outside and medium rare within (about 6 min total). Transfer the lamb to a platter and let it rest for five minutes and then serve with a squeeze of lemon and another drizzle of olive oil.
