Stuffed Pork Chops
This is a recipe that my mom made for us growing up. A yummy dish that warms your insides. Some call it comfort food; I call it mom food. I start by cutting my chops 3/4- 1 inch thick, and then you cut a "pocket" in the chop that will hold your stuffing. Once the chops are prepared you can set them aside while you prepare the stuffing. Prepare the stuffing per the instructions, and then take a spoon and "stuff" the chops. If you like your stuffing to be crunchy, like my husband does, you can set some extra on top of the chop.
Bake the chop at 375 degrees for 45mins to an hour, or until the internal temperature is 140 degrees. Since mine were cut thicker they did take almost an hour to reach perfection. Paired with a baked potato and big locally grown blackberries. This meal is a hit!
